WOW! This is simply the most decadent rice I have ever had. It is a must try.
This one goes really well with the TOFU in Peanut-tomato broth recipe
Ingredients:
1 cup jasmine or basmati rice
1 TBLS minced lemongrass
1 TBLS minced garlic
1 teaspoon fine sea salt
1 14oz can of coconut milk
Directions:
- In a small saucepan over medium heat, combine the rice, lemongrass, garlic, salt, 1/2 cup of water and the coconut milk. Bring to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes or until the rice is tender and the liquid has been absorbed. Remove the pan from the heat and set aside.
