This is just an all around awesome dip to have on hand. Easy to whip up and enjoy.
Ingredients:
1 cup whole fat Greek yogurt
½ small clove garlic, grated
2 Persian cucumbers, peeled and grated
1 tbsp each fresh dill and mint, finely chopped
2 tbsp olive oil
Salt and Pepper
Directions:
- Toss cucumber in colander with sprinkle of salt and allow to drain in sink for 15 minutes. Once
drained, press out as much excess water as possible. - In bowl, whisk together yogurt, drained cucumber, grated garlic, herbs, ½ tsp salt, and a few
grinds of pepper. Allow to chill in fridge for 1 hour up to overnight. Season to taste just before
serving.
