Sweet Potato Hummus

This was an instagram recipe that I really loved. It was easy to make and super delicious. The first time I made it I forgot to put in the beans and it was also really good. Give that a try sometime! Link to the OG recipe

Ingredients:

2 cups cubed roasted sweet potato
1 15 oz can northern beans rinsed and drained
1/2 cup olive oil
1/4 cup tahini
2 tbsp lemon juice
2 cloves garlic
1/2 tsp salt

Directions:

STEP 1: Roast sweet potato at 425 F for 30 min on a baking sheet lined with parchment.

Add all ingredients to food processor and blend until smooth!

STEP 3: When serving, add olive oil and some seasonings that you enjoy!

Notes

Keep for five days in fridge.
