This recipe was another instagram recipe that I love! It is so simple and it taught me a new trick to keep the onions crunchy! OG recipe here.
Ingredients:
2 red onions or 1 big red onion, sliced
2 cups water
2 cups any vinegar
1/3 cup sugar
2 tbsp salt
4 garlic cloves
2 tsp peppercorns
Directions:
STEP 1: Cut top and bottom off onion and slice from root to end (this is the secret. It makes for more crunchy onions). Separate into two 16 oz mason jars. Or you can just use one large container.
STEP 2: Add the peppercorns and garlic cloves.
STEP 3: Boil water, vinegar, sugar & salt. Whisk until everything is dissolved. Pour this liquid into the mason jars until everything is fully submerged. Place in the fridge for minimum 1 hr or overnight.
