I love cooking Pizza! It is always something I like to do for the people in my life. It is such a hands on fun activity. The OG recipe comes from Life With MikeG here.
INGREDIENTS
1000 grams flour (All Purpose or Bread) if you have bread, use that!
20 grams salt
1 tsp. yeast (instant)
600 grams water
20 grams olive oil (leave out to start)
RECIPE DAY
- Mix everything in a stand mixer and mix for 2 minutes. While it is mixing and has come together a bit slowly add the olive oil while still mixing.
- Let sit for 2 minutes
- Mix for 5 more minutes. Take out and then fold it a few times on the counter.
- 30 minutes resting on counter covered by a damp towel.
- Place in a bowl to double in size. Should take about 3-4 hours. Cover with a lid.
- Once doubled, pour out on counter and cut into the sizes you want. 250g ish for 6 balls. Or 375 grams for 4 balls.
- Place each on a quarter sheet baking sheet that has olive oil down on it. Then top each with a little more olive oil. Place a damp towel over them and put them in the fridge over night.
BAKING DAY
- Take out of fridge 30 minutes to an hour ahead of time. Turn on the oven 550 and place the baking steal in. Top is what the recipe calls for but I have also done the middle.
- Put flour in a deep dish so that you can roll the dough in it before you work on it.
- Take one of the balls and place in a bowl of flour then start to work the dough.
- Put toppings on that you like and bake for about 6 minutes or till you see the crusts lepording and looks great.
