Einkorn Protein Rolls

We are looking into using Einkorn flour more for all its health benefits that it offers. This recipe Nikki and I are working on together. I think it is a good one and I hope you guys like it too. Check back as we might make slight changes.

INGREDIENTS

137g Einkorn All Purpose Flour
5g (1 1/2 tsp) Baking powder
2 g (1/4 tsp) salt
186g. Greek Yogurt

Directions:

MAKE THE BAGEL DOUGH (Part 1): Start by preheating your oven to 380°F. Line a sheet pan with baking paper.

MAKE THE BAGEL DOUGH (Part 2) : Add the flour, baking powder, yogurt, and salt to a large bowl. Mix with a large wooden spoon, or in a kitchen aid with a dough hook, until it comes together in the bowl. Bring the mixture into a rough dough, add a little oil to the bottom of the bowl, and roll the dough in it to make it less sticky.

SHAPE THE ROLLS: Place your dough onto a floured surface and cut it into 4-6 roughly equal pieces depending on how many rolls you want. You can weigh them if you want to get precise. Roll them into round balls and place on the baking sheet.

BAKE THE BAGELS: Transfer the tray to the oven and bake for 20 minutes until golden brown and glorious. Remove from the oven, then leave to cool for at least 15 minutes.
