Mexican Street Corn


This corn is fantastic! It serves 8 people. Here is the original recipe from

8 ears of corn, husks removed

1/2 cup Mexican crema (this is in a small can) or sour cream

1/2 cup mayonnaise

1/2 cup cilantro

1 clove garlic, minced

1/4 teaspoon ground chipotle pepper, to taste

2 teaspoons finely grated lime zest, from 1 lime

2 Tablespoon lime juice, from 1 lime

1/2 cup Cotija cheese, crumbled (sub PARM)

Lime Wedges to serve.

Salt and pepper to taste


1. Heat gas or charcoal grill to 400F

2. Whisk together the sauce (All ingredients but the corn and the Cotija or Parm cheese)

3. Grill the corn on the grates. 3 minutes undisturbed then turn over and repeat. When all sides are browned remove to plate.

4. Top with sauce and Cotija or parm cheese. Use a brush to slather the corn with this sauce.
