Smoked Corn Beef + Dressing


Ingredients :

BBQ Sauce
Buckley Farms Corned Beef Brisket… 3-5 LBs (I did a 3.89 lb one last time)

Time: 15 min and 5 – 6 hour cook

Set smoker to 275

Step 1: Remove from package. Rinse and pat dry. (Or you can use the packet and let sit in water bath for a few hours *** Not needed but if you have the time.)

Step 2: Place on smoker fat side up at 275 and let cook till it is 161-164 internal temp at widest part.

Step 3: Take out and place in a prepared pan of BBQ sauce on the bottom. Place the Beef on top and rub with mustard and BBQ sauce. Cover with tin foil and put back on grill till an internal temp of 204.

Step 4: Let rest for 30 minutes cut in thin slices and enjoy!

Thousand island dressing


I doubled the recipe but here are the original amounts. I will put changes off to the side with the doubled quantity.

1/2 clove garlic, minced

1/4 teaspoon kosher salt plus more to taste

3/4 cup prepared or homemade mayonnaise (I used about a 1/4 cup less in the double)

1/4 cup bottled chili sauce (I used way less, probably about 1 Tablespoon of Sriracha in the double)

2 tablespoons ketchup

1 1/2 tablespoons minced onion (2 TBLS in the double)

2 teaspoons sweet pickle relish (2 TBLS in the double and I just used my Cuisinart to blend up onion and dill pickles)

1/2 hard-cooked large egg, pushed through a sieve or finely chopped (NO EGG IN MINE)

Freshly ground black pepper
