Hello everyone… I have really been enjoying making noodle bowls. I found a great recipe to make these noodle on the site Pinch and Swirl here is the orignial post. Below is my quick post on how to make these babies.
Ingrediants:
3 cups all-purpose flour (408g)
1 teaspoon fine sea salt
1 teaspoon baking soda
2 large eggs beaten
1/2 cup warm water.
Directions:

Whisk together flour, salt and baking soda in a stand mixer. Add eggs and warm water.

Use dough hook to mix. When together, have it knead the dough for 5 more minutes.

Turn out on to floured surface and shape into a rectangle. Cover with plastic wrap and refigerate for at least 1 hour.

Dust a rimmed baking dish with flour.

Remove dough, cut into 6 equal parts.

Run one part at a time through a pasta roller. Run it on the lowest setting once. Then fold over the dough and run it again. Add flour to it and then click it up 1 more setting. Run it once, and go up to the next setting. Remebering to flour each time. You should go up to setting 4.

Then run the noodles through the pasta cutting attachment. Dust noodles with more flour and put them in little nests on the floured baking sheet.

Cook noodles for 1-2 minutes.

You can freeze these noodles
