Golden Eggplant Casserole

Serves 4 – 6

Preheat oven to 350 F.
Combine in a bowl
15 soda crackers, crumbled (I add some more for the topping)
2 T. melted butter

Toss. Take out and reserve 1/4 c. for topping (more if you put more in)
Add to remaining crumbs:
3 c. cubed eggplant (3/4″ cubes)
1/2 c. shredded sharp cheese
1/4 c. chopped celery
1/2 t. salt
1/4 t. pepper
1 c. evaporated milk

Turn into greased casserole. Top with reserved crumbs. Bake for 45 minutes in oven at 350 F.
